One of my favourite "I can't be bothered" meals is scrambled eggs on toast.  It's quick and easy to make and yet delicious and comforting. Scrambled eggs on a slice of wholegrain toast is a meal rich in protein, low GI carbohydrates, fibre, vitamins and minerals.
 
The only problem with scrambled eggs on toast, is the lack of vegetable.  To change this I often serve mine with a salad on the side.
 
However it's also possible to cook some vegetables in with the scramble, and it still be an easy meal. I regularly make an Indian spiced scramble at home, which includes fresh tomatoes and spinach, mixed through the eggs. With ginger and Indian spices, it's positively delicious.
