Ingredients for Gooseberry jam
2.25 kg gooseberries
850 ml water
3 kg sugar
Preparation method for gooseberry jam
1. Top and tail the gooseberries, then wash and drain thoroughly. Put in a pan with the water and simmer gently until the skins burst and the fruit has reduced to a pulp.
2.Add the sugar and stir until dissolved, then boil rapidly until setting point is reached. Variation: Add a dozen elderflower heads, rinsed in cold water and tied in a muslin bag, to the simmering fruit. Remove the bag before adding the sugar.
