Four Fruit Marmalade
Grapefruit, orange, lemon and lime combine to make this tasty and oh so sweet marmalade!
Ingredients for four fruit marmalade
1 large grapefruit
3 large ‘Seville’ oranges
4 large lemons
1 lime
2.5 litres water
1.5 kg sugar
Preparation method for four fruit marmalade
1. Wash all fruit well. Cut a thin slice from the ends of each fruit and set aside. Cut the grapefruit into eight segments. Cut each orange into six segments. Cut each lemon and lime into four segments. Thinly slice each segment crosswise. Remove and set aside any pips. Put the reserved end slices and pips in a muslin bag and place in a large bowl with the sliced fruit. Cover with the water and leave to soak for 24 hours.
2. Next day, transfer the contents of the bowl to a pan and bring to the boil. Reduce the heat and simmer for 2 hours, until the peel is very soft. Discard the muslin bag.
3. Add the sugar and stir until it has dissolved. Boil rapidly until setting point is reached.
4. After skimming off any scum, leave the jam to stand for 20 minutes so the peel can settle. Stir to disperse the peel evenly before potting.
