 When you’re in the middle of a recipe and you realise you don’t have an essential ingredient, don’t waste time running to the supermarket or the corner shop. Try these little tricks. 

* Replace vinegar with lemon juice, and vice versa. 

* If you’ve run out of ground coffee, try adding a small stick of cinnamon to instant coffee. You won’t even notice the difference. The same trick can be used with ground coffee to enhance its flavour. 

* When you’re out of cooking wine, use 100 ml of white wine vinegar mixed with the same quantity of water, and add 2 teaspoons of sugar. Or try to replace part of the white wine with another alcohol – tequila, white vermouth, dry sherry, etc. – and the rest with stock. 

* If you’re out of red wine, replace part of the red wine volume with another alcohol – rosé, port, red vermouth – and the rest with stock.
