Ingredients for damson jam
2.5 kg damsons
850 ml–1 litre water
3 kg sugar

Preparation method for damson jam
1. Wash and dry the damsons. Put in a pan with the water and simmer, stirring occasionally, until pulpy. Discard the stones. Return the pulp to simmering.

2. Add the sugar and stir until dissolved, then boil rapidly until setting point is reached.
