Ingredients for cumquat jam
1 kg cumquats
1 lemon
1.25 litres water
1.25 kg sugar

Preparation method for cumquat jam
1. Wash and scrub the cumquats and lemon and remove any stems. Cut the cumquats into quarters; remove and retain the seeds. Cut the lemon into quarters and slice thinly; retain the seeds. Put the fruit in a non-reactive bowl. Tie the seeds in a muslin bag and add to the fruit. Cover with the water and leave overnight.

2. Transfer the fruit, seeds and water to a pan and simmer for 30 minutes. Add the sugar, stirring until dissolved, then boil rapidly until setting point is reached.

In the recipe you state boil until setting point is reached what do you mean by setting point as this is the first time of making jam.
