My thirdbudget celebrationmenu is vegetarian. If you're happy with a meat-less meal then it's one sure-fire way to reduce the cost of what you're eating. And there's no reason why a vegetarian celebration meal can't also be delicious and luxurious.
Delicious looking tart from The Wednesday Chef. It has a polenta crust and is then filled with canned or frozen artichokes mixed together with fresh herbs, yoghurt, eggs and some crumbled goat cheese. Serve with a big green salad.
Nectarine Berry Meringues
A quick dessert made with fresh nectarines and raspberries, which are quickly cooked and then topped with a cloud of crispy marshmallow meringue. Use whatever fruit is in season, as the recipe suggests pear and blackberry, or plum and blueberry would also work well.
