Tangy, melting blue cheese gives these burgers a surprise centre – a real treat for a midweek meal.

Serves 4

Ingredients for Blue cheese–stuffed burgers

375 g lean minced beef
1 cup rolled oats
1½ tablespoons tomato sauce
2 teaspoons Dijon mustard
¼ teaspoon freshly ground black pepper
⅓ cup crumbled blue cheese
4 soft rolls
4 crisp lettuce leaves
1 large firm tomato, sliced
1 small red onion, thinly sliced

 

1. Preheat the BBQ to a moderate heat. To make the hamburger patties, mix together the minced beef, rolled oats, tomato sauce, mustard and pepper in a large bowl until well blended. Divide the mixture into eight equal portions and flatten into thin patties. 

2. Place a quarter (about 1 tablespoon) of the crumbled cheese in the centre of each of four patties. Top each with one of the remaining patties and press the edges together to seal completely so you have four fat patties.

3. Barbecue the patties for 5–6 minutes on each side until nicely browned and cooked through.

4. Meanwhile, split the rolls and lightly toast them. Serve the burgers hot in the rolls, filled with lettuce and slices of tomato and onion.
