We all know you can cook steaks and sausages on a barbecue, but there are many other foods which are delicious when barbecued.

1. Sweetcorn:


You can either shuck the corn before placing on the barbecue, or leave the husks and silks attached. It takes about 10 - 15 minutes to cook and you do need to watch the corn carefully, to ensure it doesn't burn. I  serve with wedges of lime dipped in chilli and salt and then rubbed all over corn. For me, a barbecue just isn't complete without chilli lime corn.

2. Watermelon:


As I mentioned you can use watermelon in salads, but did you know it can also be barbecued? Quickly sear and d rizzle over a honey lime syrup, or dress it up with olives, rosemary and oregano.

3. Paneer:


Paneer is an Indian cheese which is quite plain by itself, but smothered with spices or a marinade, this cheese is delicious barbecued. It holds its shape and turns a lovely golden brown on the outside. You can cook slices of paneer simply marinated in a mixture of garlic, ginger, chilli and olive oil, but it also makes wo nderful tandoori kebabs.

Of course, one of the best ways to eat a watermelon, is fresh, with the juices running down your mouth and fingers.
 
However, if you're after something different, why not use your watermelon in a salad? While we usually associate fruit with sweet foods, watermelon makes a lovely, fresh salad ingredient. Here are five different suggestions:
 
  1. Watermelon and Fennel Salad: I love this salad from The Rambling Epicure. The fennel is cooked in a frying pan, until slightly caramelised and then the whole lot is topped with goat cheese, fresh mint and a drizzle of olive oil. Delicious and easy.
     
  2. Mixed Melon with Proscuitto and Walnuts: Watermelon is paired with rockmelon and honey dew in this light, summery salad. Topped with olive oil, balsamic vinegar and toasted walnuts, it's also quick and easy to make.
     
  3. Watermelon and Prawn Salad: A tangy recipe from Jamie Oliver, where prawns are marinated in lime juice and then quickly stir fried. They're served with cashews, mint, fresh chilli, baby spinach, spring onions, as well as the watermelon.
     
  4. Watermelon, Basil and Fetta Salad: I love the food of UK chef Yotam Ottolenghi, but it's often quite complicated and fiddly to make. However, this is one of his simplest recipes, where watermelon is served with feta, red onion, fresh basil leaves and finished with a drizzle of olive oil. Lovely, simple warm weather food.
     
  5. Thai Pomelo and Watermelon Salad: For something different try this beautiful looking hot, sour and sweet Thai salad. Ginger, mint, coriander, cashew nuts, coconut, chilli, garlic are all in there. Pomelos can be hard to find, but they're similar to grapefruits, so you can always substitute.

Watermelon is one of my favourite summer fruits. Where I live they're just coming into season, and while still a bit expensive, they're delicious and sweet.
 


If you're buying a whole watermelon, store it out of the fridge, in a cool, dark place. Watermelon contains the antioxidant lycopene and research show the lycopene content actually increases, when the fruit is not chilled.  Although it will only keep like this for a few days.

Once cut, then you'll need to put your watermelon in the fridge. Cover the cut edge with a piece of baking paper and store in the fridge for 3 - 4 days.
