●1 USE THE HEAT by sealing food on the hot spots, moving it to cooler areas to hold. ‘If the barbie has ledges put food on them while you catch up with other dishes.’
●2 PERFECT THE STEAK by putting your finger and thumb together then press on the fatty part below the thumb. ‘That’s how medium-rare steak feels. Press the second finger and thumb, now the fatty part feels medium.’
●3 EASY ON THE TURNOVER and avoid cooking a side twice. ‘Put on a steak, leave it for three or four minutes, turn it on the diagonal to score and leave for three or four minutes before turning it to finish.’
