Ingredients for balsamic grilled chicken


4 skinless, boneless chicken breast fillets, about 125g each
2 teaspoons olive oil
1 garlic clove, crushed or finely chopped
2 teaspoons honey
3 teaspoons lemon juice
3 teaspoons balsamic vinegar
sea salt and freshly ground black pepper
sprigs of fresh coriander to garnish
 

Cooking method for balsamic grilled chicken

1. Lightly oil a hotplate or grill rack and preheat to medium–high heat.
 
2. Place the chicken breasts between two sheets of plastic wrap and lightly beat with a rolling pin to an even thickness. In a small bowl, combine the olive oil, garlic, honey, lemon juice and vinegar. Brush half of the oil mixture over the chicken breasts.
 
3. Cook the chicken over direct heat for about 5–6 minutes on each side or until cooked through. Season with salt and pepper. Serve the chicken breasts drizzled with the remaining oil mixture, and garnished with sprigs of coriander.
