Apple crumble recipe
Why not enjoy your proverbial ‘apple a day’ in a satisfyingly sweet dessert? An abundance of apples, a crunchy oat topping and a spoonful of frozen vanilla yogurt add up to a sweet treat that's full of flavour and nutrients.
Ingredients
2 tbsp soft brown sugar
2 tbsp plain flour
½ tsp ground cinnamon
¼ cup (60ml) lemon juice
1.5kg red apples
1 tsp vanilla essence
1 litre vanilla frozen yogurt
For the topping:
½ cup (45g) rolled oats
⅓ cup (50g) plain flour
¾ cup (115g) soft brown sugar
½ tsp ground cinnamon
4 tbsp salt-reduced polyunsaturated spread
Preparation
1. Preheat the oven to 180°C. Lightly coat a rectangular ovenproof dish with cooking spray. Put the brown sugar, flour and cinnamon in a food processor. Pulse to combine. Alternatively, use your fingers to mix the ingredients together in a medium bowl.
2. Pour the lemon juice into a large bowl. Peel the apples and cut into 5mm slices. Add to the bowl, tossing with the juice. Sprinkle with the brown sugar mixture and add the vanilla essence. Toss until evenly coated. Turn into the prepared ovenproof dish.
3. To make the topping, combine the oats, flour, brown sugar and cinnamon in a medium bowl. Using your fingers, rub the spread into the flour mixture until it resembles coarse crumbs. Sprinkle over the apples. Bake for about 40 minutes or until the topping is golden and the apples are tender. Serve with scoops of frozen yogurt.

| Janette Waimotu on 01 December 2011 ,12:47 All your recipes are realy exciting, but I have 1 question. Can you put the nutritional values, especially the calorie value in with your recipes, you see I am very calorie governed with my cooking as I would imagine are a lot of other cooks. Kindest wishes, Nanny Jan |
